Peanut Butter Cookie Truffle


My signature recipe I make is the Oreo truffles..

One of my girlfriends suggests puttng peanut butter cookies instead of Oreos, 
so I decided to give it a whirl.

Ingredients 
1 Package of peanut butter cookies
1 Package of reduced fat cream cheese
1 Package of dark chocolate chips

What You Will Need
Cookie Sheet
Parchment Paper
Mixing bowl
Large pan & sauce pan / Double Boiler
Fork


Take cream cheese out of fridge to be around room temperature.
Start with grinding up cookies in a food processor.



After it is fine, put cream cheese in bowl in small sections (it will become soft faster) and put in microwave for 35 seconds. Add cookie crumbs. Mix until combined.


Roll mixture into bite size balls and place on parchment paper on cookie sheet.


Let cool for 30 minutes in fridge. It allows them to harden, making it easier to coat in chocolate.

Now comes the part of coating the balls with the dark chocolate.

If you have a double boiler, you can use that. 


However, I have yet to invest in one. I made my own.

You can too. Use a large pan, fill it with a little water, and place a sauce pan in the water so it is floating on it. 


This "double boiler" allows you to melt the chocolate without getting it too hot.
Burnt chocolate is the worst. Do not microwave the chocolate chunks. Trust me.


Roll balls in chocolate with a fork. A fork works best because it lets you roll off the excess chocolate. 


Place on parchment paper for easy clean up.


Let chocolate cool in fridge.

Add to a beautiful platter & share with your loved ones :)

I don't know who has caught onto the new website Pinterest yet, but if you haven't heard of it yet, prepare to get hooked.


Personally, I am constantly taking pictures of things that captive me and ripping images out of magazines. 


This allows you to create visual boards with different themes & add images with little descriptions.

Love it! Taking what I love into digital.

I don't know about all of you, but Reese Witherspoon has been my favorite since her role in Legally Blonde as the bubbly, ditzy yet intelligent Elle Woods.



Not only has she remained my favorite since then as a bombshell with humor, but she landed the January cover of Glamour. They chose the right girl to kick off the new year.

All I Want For Christmas...

During the holidays we get many things to look forward to..

- Gathering & catching up with loved ones 
- Baking cookies & treats.. (coming soon - Oreo truffle recipe!) 
- Excuses to wear sequins and sparkles
- Christmas decorations & lights of all colors 
(old fashioned are still my favorite!)
- Making our wish lists, hopeful in 
receiving as many of our picks as possible O:)

- Christmas music as you are doing your grocery shopping, getting your nails done in a holiday red or sparkle and when you're picking up your dry cleaning.

S'mores

I don't know about you, but I love s'mores. They sound especially yummy on these cold winter nights, but it would be awfully nice to make them indoors.

Discovered this site that Google created that analyzes your style - love it!

Similar to shopstyle.com with the higher-end merchandise, boutiques.com is a collection of hundreds of virtual boutiques merchandised by designers, celebrities and regular people.
